Ultraglaze glazes incorporate highly functional starches to
provide a stable coating with minimal moisture/drip loss, which
is a feature of many cheaper products. The effective seal created
on the outer surface of the meat portion means that the product

The Lucas range of textured coaters includes the original Bombay
Coater, as well as Italian, Thai, Peppersteak and Cajun Coater.
Each is a blend of coarse, coloured crumbs with a seasoning
plus coarse herbs and in some cases, peppers, for great visual
appeal. They have been designed to provide excellent adhesion
